Blueberry Coffee Cake

Yield: Serves 24 to 30

Ingredients:

• 2 cups all-purpose flour
• 1 cup sugar
• 2 teaspoons baking powder
• 1/4 teaspoon salt
• 2/3 cup vegetable oil
• 1 cup milk
• 2 eggs
• 3 cups blueberries, fresh or frozen
• 3 tablespoons sugar
• 1 teaspoon cinnamon

Directions:

1. Preheat oven 350° F.
2. Grease 9x13-inch baking pan.
3. Mix together the flour, sugar, baking powder and salt.
4. Add the oil, milk and eggs.
5. Mix for 3 minutes.
6. Pour batter into the prepared pan, evenly sprinkle the blueberries on top.
7. In a small bowl, combine the 3 tablespoons of sugar and cinnamon, then sprinkle over the blueberries.
8. Bake 50 minutes or until a toothpick inserted into the center comes out clean.
